Dried sea moss is used in many traditional cuisines in Shanghai and Zhejiang area. The biscuit is one of my favorite.

Materials:

  • Dried sea moss powder (苔条) 15 g
  • All purpose flour 200 g
  • Butter 115 g
  • Sugar 65 g
  • Egg 1
  • Baking soda 1.3 g
  • White sesame

Recipe:

  • Let the butter melt in room temperature, combine with sugar, baking soda, and egg yolk.
  • Add sifted flour and shape into a bulk.
  • Use a rolling pin to flatten out the mixture (about 0.3 cm thick).
  • Cut into square tiles and place on a baking sheet.
  • Brush some egg white on the top, and top with some extra sea moss powder and white sesame. Press tenderly using fingers.
  • Bake 350 F for 15 minutes, and 300 F for another 10 minutes – Done!
